Ingredients (for one person):
Sweet miso 10g
Fresh lime juice 20ml
Garlic 1 clove
Mange tout 50g
Cooked chickpeas 40g
Toasted sesame seeds 2g
Fresh mint 2g
First you will need to cook and prepare the salmon. Crush the garlic clove and mix with lime juice and sweet miso. Marinate the salmon (preferably overnight) and cook in the oven at 150 degrees celsius for 15 to 20 minutes.
Whilst the salmon is cooking prepare your quinoa salad. Blanch your 50g of mange tout and cook the quinoa. Put the quinoa in a saucepan and cover with water. Simmer until quinoa absorbs water, adding more water if required. Add your cooked chickpeas, mirin, tamari, toasted sesame seeds and freshly chopped mint and mix everything together.
Add your quinoa salad and your miso salmon to a plate and enjoy.
