Ingredients

  • 20ea Egg
  • 600g Cooking Carrots
  • 500g Fresh Spinach
  • 250g Red Onions
  • 150g Walnuts
  • 125g Dried Cranberries
  • 85g Watercress
  • 81g Fresh Curly Parsley
  • 40g Fresh Coriander
  • 20ml Olive Oil
  • 15g Cumin Seeds
  • 15g Curry Powder
  • 10ml Lemon Juice

Cooking Instructions

1. Fry the onions in a little oil and then add the curry powder 2. Add the spinach, parsley, and coriander and leave to soften very little 3. Take it off the heat and then add the walnuts and cranberries 4. Beat the eggs and add to the mixture 5. Place in a greaseproof tray and bake in the oven at 160 C for 25-30 minutes 6. Blast chill and cut into 10 portions when cold
