  • 1g Sweet Potato
  • 250g Onions
  • 200g Unsweetened soya yoghurt
  • 200g Light Mayonnaise
  • 200g Celery (weight)
  • 0.5ea Raw Green Pepper
  • 0.5ea Cooking Red Pepper
  • 0.5ea Cooking Yellow Pepper
  • 250g Soya Beans
  • 250g Broad Beans (frozen)
  • 250g Canned Sweetcorn
  • 250g Green Beans
  • 200g SugarSnap Peas
  • 100g Mango Chutney
  • 50g Tomato Puree
  • 50g Curry Powder
  • 10g Salt
  • 10g Black Pepper
  • 5ml Olive Oil
  • 30g Parsley

Cooking Instructions

1. Coat the sweet potato wedges with the olive oil and bake in the oven until cooked 2. Soften the onion in a little water Add the curry powder and stir to mix then take off the heat Add the parsley, tomato paste, mayonnaise, salt & pepper 3. Mix well and portion out.
