So that you can make your own versions of the MY Food healthy meal plans!

This dish can be served as a light lunch or as an accompaniment to meat and chicken dishes. It has a wonderful bright green colour and is perfect for an Autumnal lunch.


  • 2 courgettes (halved length ways and sliced)
  • 400g flageolet beans, drained and rinsed
  • Grated rind and juice of a lemon
  • 3 tablespoons of garlic – infused olive oil
  • Salt
  • Pepper

Cook your courgettes in boiling salted water for 2-3 minutes, or until tender. Drain well and refresh under cold running water.

Transfer the drained courgettes into a bowl with the beans an stir in the oil, lemon rind and juice, salt and pepper.

Chill for 30 minutes before serving

To add a little extra flavour to the dish add some chopped basil and mint to the salad before chilling!
